Foothill Roots Farm is primarily a Community Supported Agriculture farm located in the foothills of Placer County in Meadow Vista, Calif. We grow a large variety of seasonal vegetables for market and sell our crops to CSA subscribers, through the Tahoe Food Hub, and at our farm stand in Meadow Vista on Thursdays and Fridays through the end of October.
What’s Ripe Now: Right now, we are transitioning to cool-season crops that thrive in fall. This includes broccoli, kale, chard, radishes, and turnips. Many of these crops are nearly always available in stores, but are much tastier when matured during the cooler days and nights of fall.
What’s Sprouting Next: Spinach is just around the corner. We grow a lot of spinach into the early part of December because the crop loves the cool weather and its taste actually gets sweeter after going through a frost. We would love to have spinach all year, but because it insists on cool weather, it refuses to sprout in the heat of summer.
Favorite Bloom: One of the things we look forward to in October is the flavor that comes with winter squash: specifically acorn, delicata, butternut, and kabocha. While these squash actually grow all summer, they are called winter squash because they will store and feed you all winter long.
