Recipe from The Crest Café and Catering, Located on the Truckee River at Alpine Meadows

The Crest Cafe’ specializes in serving fresh, made-from-scratch food. This includes a variety of homemade soups. In the summer months they rotate between traditional Gazpacho, Mango-Spacho and Watermelon Gazpacho. Chef Kyle Davis would like to share one of his (and his local fans’) favorites, Watermelon Gazpacho.

•1/2 Seedless Watermelon cubed, no rind
•2 Cucumbers peeled, seeded & diced
•1 Cup sliced Almonds
•2 slices of bread
•2 Tbsp. Champagne Vinegar
•2 Tbsp. Olive Oil
•2 Tbsp. Kosher Salt
•1 Tbsp. Sugar
•1 Tsp. Ground White Pepper
•1 1/2 Cups chopped ice
•Sour Cream garnish
•Cilantro garnish

Divide all ingredients into two bowls and blend each separately in a blender (entire batch cannot fit into one blender). Combine into one container and stir well. Refrigerate for one hour. Garnish each serving with a dollop of sour cream and a sprig of cilantro.
