Mummy Sausages with Marinara
The Egyptian practice of preserving deceased kings has haunted me since learning about it in fifth grade. Between canopic jars, used to store the four organs removed during the process, brain hooks, no explanation needed there, and the legendary pharaoh’s curse, it’s no wonder mummies became quintessentially entwined with Halloween. While mummification took 70 days back in ancient times, these mummified sausages are quick to prepare and easy to share. ~ Ashley Owen
Ingredients:
4 sausages of choice
4 wooden skewers
1/2 cup fettuccine, cooked
Pesto sauce
Marinara sauce for dipping
String cheese
Directions:
Grill or sauté whole sausages until cooked. Once sausages are cooked, from bottom slice approximately 1/2 inch to make two legs, and then from middle slice sides of sausage to make arms. Stick skewer in bottom of sausage for a handle. Spread pesto on sausage as desired, then wrap one to two pieces of cooked fettuccine around sausage like a mummy. Heat marinara sauce. Once sauce is hot, peel strips of string cheese and place on top of hot sauce like mummy bandages, allowing cheese to melt slightly. Dip and enjoy.
Brains in a Jar
When the zombie apocalypse does come to Tahoe, it’s essential to be prepared. If we’ve learned anything from zombie movies, it’s that escaping the masses of undead can be frightening and quite difficult. If you can’t beat ‘em, why not join ‘em and start eating brains. Instead of real animal brains — a delicacy in some places, how about faux brains, like this dessert? Recipe from livinglocurto.com
Ingredients:
Dozen half-pint mason jars, or similar sized jars
White cake mix
Seedless raspberry jam
Red and black food coloring or frosting gel
3 cups confectioners’ sugar
1 cup butter, room temperature
1 tsp vanilla extract
1 to 2 Tbsp whipping cream
Directions:
Prepare white cake mix, adding red food coloring if desired, and bake in 9 by 13 inch pan so cake is thin. While baking, make frosting. On low speed, mix confectioners’ sugar and butter until blended, then mix at medium speed for three minutes. Still mixing on medium, slowly add cream, vanilla, and three drops of red and one drop of black food coloring to achieve “brain color.”
To assemble brain jars, put a circular-cut piece of cake in base of jar (first piece should be slightly smaller diameter than jar so it fits in bottom). Then put a layer of jam on top of cake slice, allowing jam to run along sides of jar. Load frosting into piping bag with #5 tip, and squeeze frosting in zigzag pattern along edge of jar above cake and jam layers, and place another cake circle (smaller than first one) inside jar with frosting around it. Cover with more frosting, squeezed in zigzags to look like brains, and serve.
