Ingredients:
3 c. fresh corn from 2-3 ears (or frozen organic yellow corn)
1 ½ c. chopped yellow or red bell peppers
½ small yellow onion
¾ c. golden flaxseed, finely ground (about 1 c. ground)
½ c. hemp seeds
2 T. lime juice
1 to 2 jalapeno peppers, minced, seeds to taste
½ t. ground chili powder
2 t. ground cumin
2 t. sea salt
Instructions:
In a food processor, chop the corn, bell pepper and onion until smooth. Add the remaining ingredients and process until just combined.
Using a spatula, spread the dough thinly onto solid dehydrator trays and cover with parchment paper. Dehydrate at 115 degrees for 6 to 8 hours, or overnight. Flip the sheets over onto the tray and carefully peel away the paper. Break or cut into pieces. Place back in the dehydrator for another 4 to 6 hours or until crisp. Store in an airtight container for up to two weeks.
