Austin’s Apple Crumb Pie has been a long time favorite at the restaurant and is made from scratch daily. The pie is heated and served with vanilla ice cream. John Brimm, owner and chef, is well known for his scrumptious homemade pies, which can be specially ordered from the restaurant or enjoyed after a tasty meal.

Homemade Piecrust:

4 cups flour
1 cup shortening
1 tsp salt
1 1/4 cups cold water

Combine flour, salt and shortening. Use a pastry cutter to ‘cut-in’ or mix in shortening. Mixture should resemble tiny pebbles when finished. Add water and carefully fold mixture with a spatula. Do not overwork dough. Refrigerate dough and roll out with a flour-dusted rolling pin. Place dough in a 9-inch pie pan and fold and crimp edges.

Apple Filling:
6 large Granny Smith apples
1 cup flour
1 cup sugar
1 tsp cinnamon

Peel and dice apples into large pieces. Combine sugar, flour and cinnamon and mix well. Place filling into crust.

Crumb Crust:
1 cup flour
1 cup brown sugar
1/2 cup melted butter

Combine and mix well. Crumbs should be the size of raisins when finished. Place crumbs on top of apples and bake pie at 350 degrees for 45 minutes. Check often as time may vary with ovens. Crumbs should be golden brown when finished. Do not let crumbs burn or blacken. Serve with a scoop of vanilla ice cream and listen for howls of joy.
